My creative side took the best of me in the kitchen the other day at breakfast. I wanted fish omelette but not the regular ,so I put on my thinking cap quickly.I have basically deconstructed the regular fish and vegetable omelette and created this interesting piece. I had some left over bell peppers, some cans of sardine in the pantry, so I just headed to the kitchen to have fun at breakfast. Cooking does not have to be a chore all the time
Trust me this meal is simple but will give the impression that you went to a Culinary school for this one . You will wow your guests or family members and possible create a new expectation of your cooking ability. Well this blog is there as your guide. It’s your little secret I know .
Let me make a little confession that I had some difficulty keeping the the onion down in the center of the pepper when it was still raw. It kept on popping out of the ring.I had to use a spoon to press it down until it softened up a bit whilst cooking and it ‘realxed’. Guess you may want to cut your onion ring smaller so it stays well within the ring and does not do the popping up like mine.you can play around with some interesting color combinations of the peppers
My offering today is what I call a simple balanced meal, eggs, fish,vegetables from the peppers, oil, dodo. ….the crunchiness of the vegetables is even an extra bonus.
4 rings of red, green and yellow Bell peppers
2 pieces Sardine
Pinch dried Pepper
Salt to taste
Pinch chicken seasoing
Oil for coating frying pan
1, Have your Onion and Pepper rings ready
2,Beat the eggs with dried pepper, seasoning, salt and flake in the fish
3, Heat the frying pan, add very little to coat base of pan, place the pepper rings and onion in it, and fry for 2 minutes.
4, Pour the egg slowly into the pepper rings and allow to set . You may use a fork to stir egg gently in the ring.
5, Turn the Pepper and egg ring gently on the other side to cook for another 2 minutes
6, Serve with dodo
