Lagos is just somewhere you do not necessarily have to shop in a real market to get a decent meal on the table. Sweet potato is in season and cheap too. Every where I turn I just seem to have seen them, mainly the white variety, so when I found the red variety, I was drawn to it . I have this habit of accompanying my carbohydrate foods with stir fried vegetables. This time I am using Aleho ( Hausa) or Efo Tete as the Yorubas call them.
Paired with fish stew I had in the freezer, my protein source was already there, what more can you ask for on a plate to call it a nourishing meal. Simple but tasty.
Recipe for Stir Fried Vegetables
1, Wash and chop a medium bunch of the Aleho into tiny bits.
2,Chop 1/2 onion.
3,Heat 1 cooking spoon vegetable oil.
4 Fry the onion , add seasoning to taste, add pieces smoked prawns and a pinch of curry for about 3 minutes
5, Add the vegetables and stir fry for 2 minutes.
Serve as side dish
